Homemade Alfredo Sauce with Heavy Cream Tips

  • Always add the cream in very slowly while mixing rapidly. This is the key so the cream won’t curdle.
  • Trust me when I tell you adding white American cheese will make a huge difference. Don’t skip this step! It is so good.
  • You do not need to add salt to this recipe. The sauce will get enough salt from the cheese.
  • This is it: my secret ingredient. I make the best fettuccine sauce recipe using one special addition… white American cheese! I cannot even begin to tell you how creamy this makes this dish. The extra cheese adds a whole layer of flavor that you just don’t get from other fettuccine recipes.

What to do with Alfredo Sauce

My favorite part about easy fettuccine Alfredo is that it goes well with so many different ingredients. You can add in whatever you like to really make it your own. Here are some of my favorites:

  • Steak Alfredo
  • Chicken Alfredo
  • shrimp – make it shrimp Alfredo
  • sauteed spinach – I love adding spinach to fettucini alfredo!

Mix in what you like and have fun! That’s what this dish is all about – it’s so versatile!

For a garlicky alfredo sauce, saute 1 to 2 cloves minced garlic with the butter before adding the flour. You can use 2% or skim milk for this recipe, but the sauce will be thinner. How do you thicken a creamy sauce? ›

The most readily available sauce-thickener is flour. For a too-thin sauce, try adding a slurry (equal parts flour and water, whisked together) or beurre manie (equal parts softened butter and flour, kneaded together to form a paste)—both are ideal thickeners for rich and creamy sauces, such as steak sauce recipes.

How do you fix broken Alfredo sauce? ›

The Fix Is Simple—Add Water Back.

A generous splash of water is all it takes. Here's how fix a broken sauce: Add about ¼ cup of water to the pan and reheat the sauce to a vigorous simmer, whisking constantly. The bubbling action will help re-emulsify the butter and bring back that thick, glossy sauce.
