Hearty and flavorful Guinness Irish beef stew, made even easier in the slow cooker! A comforting meal, perfect for St. Patrick’s Day celebrations or any day!

Slow Cooker Guinness Beef Stew Recipe (1)

This is a pretty awesome week. Of course there’s the obvious, St. Patrick’s Day. But it’s also my birthday week. In fact, my birthday falls on pi day… 3.14. I usually mean to celebrate with pie but then I forget. This year, I planned ahead and bought a whole bunch of apples to make my absolute favorite apple crumb slab pie. Seriously, it’s the best! There may or may not also have to be cake or cupcakes and another kind of pie… pizza pie.

Also, today is our sweet pup Lucy’s first birthday! Kind of fun that we have the same birthday week. I’m probably going to have way more fun with her day than mine. I get way more enjoyment out of buying for others than receiving gifts. That’s really how it should be. She’s already suspicious that there’s a box full of goodies for her. If you haven’t been following along on Instagram, you should be. I post lots of videos and pictures of her in my stories – daily!

The only downside to this week is that we’re getting slammed with even more snow! We got 19 inches of snow at the end of last week, knocking out our power and damaging plenty of trees. Tomorrow we’re supposed to be getting even more snow. Fingers crossed we manage to keep our power through this storm!

I’m beyond ready for spring!

Does this use salted or unsalted beef broth?

    • Rachel

I always use original/salted unless otherwise noted.

  2. Jennifer McDowell Reply

Can I make this without browning the beef first? Or can I brown the beef the night before and throw it all in the crock pot in the morning?

    • Rachel

Browning the meat adds additional flavor but you can absolutely do ahead or skip if you’re short on time. Enjoy! :)

    Easy, delicious recipe!
I like a thicker stew, so I tripled the cornstarch/water mixture and it came out perfectly.

Stir together with the beef until combined, then add in garlic, onion chunks, carrots and diced potatoes. Cover and cook on low for 7-8 hours or on high for 4-5 hours. I prefer to cook this slow and low so that the beef become really tender and the flavors have time to meld together.

Stouts, like Guinness, are known for their bitterness. If the stew is cooked too quickly or if it doesn't include ingredients to balance the bitterness, this flavor can be very pronounced. Is it better to cook meat on high or low in a slow cooker? ›

Certainly, foods will cook faster on high than on low. However, for all-day cooking or for less-tender cuts, you may want to use the low setting. It's safe to cook foods on low the entire time -- if you're leaving for work, for example, and preparation time is limited.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

When to add vegetables to stew? ›

Add vegetables: After 1 hour 30 minutes, carefully remove pot from oven and use oven mitt to remove lid. Add vegetables and stir gently to combine. Carefully replace lid on pot and return stew to oven to cook for an additional hour.

How do you make beef stew taste richer? ›

The flour helps to thicken a stew as it cooks. Whisk a teaspoon of flour in a little cold water to make a slurry, then stir into the stew as it's cooking. Don't add dry flour directly to the stew as it may clump. After adding the slurry, bring the stew to boil.

Why is my beef stew chewy in the slow cooker? ›

The collagen, a connective tissue, is in high supply in these tougher cuts of meat. When cooked in moisture, the collagen dissolves into a gelatin and the meat fibers separate more easily. The higher the cooking temperature, the tougher the meat fibers become; a boil produces rubbery, chewy stewing beef.

What happens if you don't brown meat before a slow cooker? ›

"Browning, or caramelizing, meat before putting it into a slow cooker isn't 100 percent necessary, but it is well worth the effort for the most flavorful and full-bodied end result," he says. "The caramelized surface of the meat will lend rich flavor and color to the finished dish."

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker. Stick to heartier root vegetables like potatoes, onions, leeks and yams, or wait to add the tender vegetables until the last 30 minutes or so of cooking time.

Can I leave food in a slow cooker overnight off? ›

On some occasions, you'll want to leave food in the slow cooker to keep warm, during Thanksgiving or Christmas Dinner, for example, or any other event or holiday. While it's perfectly ok to use your crock pot in this way, try to avoid leaving food on the warming setting for more than four hours.
